講起農曆新年，每個不同籍貫的華人有不同習俗，也吃不同的年菜，華人過農曆新年，通常都以美味佳肴款待親友，尤其是吃團圓飯時，更會煮一些平日較少吃到的 豐富年菜，慰勞自己和家人。 今年春節為了省錢沒有回台灣跟家人一起過年，中國餐館一家人邀請肉肉和老爺到他們餐廳一起圍爐，除了我們外，他們還邀請了另外兩位美國常客一起歡度除夕 夜。
Speaking of Chinese New Year, all Chinese from different places have different customs and annual dishes. In Chinese New Year, Chinese people usually entertain relatives and friends with delicious food. Especially for a family reunion dinner in Chinese New Year Eve, they will cook abundant dishes which not normally have on ordinary days to reward themselves and their families. In order to save money this year, instead of going back to Taiwan with our family, we were invited by the Chinese restaurant with another two frequent American customers to have a gathering dinner and celebrate Chinese New Year Eve together.
先簡單說說肉肉台灣家過年傳統習俗，年前要大掃除，除舊佈新。除夕團圓飯年菜一定要有魚(通常不吃的，要留到過年後！)，象徵年年有餘；一定要有長年菜，通常稱「芥菜」或「刈 菜」，吃的時候要有頭有尾不能咬斷，代表長命百歲、長長久久；一定要有一隻全雞，台語諧音「起家」；一定要有豬肉，表示「諸事吉祥順利」；一定要有火鍋， 表示圍爐團圓之意；還有三糕，年糕，代表年年高昇；發糕，代表發財和運勢大發；蘿蔔糕，台語叫「菜頭棵」，代表好彩頭；一定要有佛跳牆，佛跳牆因為象徵著 在圍爐的團圓時刻，「佛」跳牆來到家中，故被視為非常吉利的年菜。年夜飯後，晚輩要給長輩拜年，已有經濟能力的要發紅包給長輩及未有經濟能力者。
Let me briefly introduce my hometown traditional Chinese New Year custom first. Spring cleaning before the Chinese New Year to get rid of the old to make way for the new. It certainly has a dish of fish for family reunion dinner(we normally won't eat it until after the New Year day.) to symbolize having enough every year. There must be a dish of longevity, usually called "gei cai" or "gua cai", which can not be bitten off while eating, meaning to live a long life and last long time. There must be a whole chicken, Taiwanese homonym meaning "build up a family". There must be a dish of pork, showing everything is lucky and smooth. There must be a hot pot, showing to enclose the stove and reunion. There are also three cakes. New Year cake, meaning to get promotion every year. Fa cake, meaning to become rich and have a great fortune. Radish cake, Taiwanese call "cai tao gei", meaning good luck. There must be a jar of "fotiaoqiang", symbolizing at the time of reunion, "Buddha" jumped over the wall and came to the house, so it is considered as a very lucky annual dish. After the family reunion dinner, the young generation should pay the New Year call to the elders. Those who have jobs should give red envelops with money to the elders and people who do not have economic abilities in the family.
老闆一家人來自福建，跟台灣頗有淵源，本以為福州話跟閩南話一樣，原來真的只有福建南部地區才說閩南語，福州話和閩南話一點相似處都沒有，肉肉是有聽沒有懂啦！

The whole family of the restaurant come from Fujian, quite the same origin with Taiwan. I thought Fujian has the same dialect as Taiwan. The truth is Taiwanese is only spoken in the south of Fujian area. There's nothing similar at all between Fujian dialect and Taiwanese. I was listening but had no idea!!

既然是開餐館，當然一定要在年菜上大作文章！來看看福建人過年都吃哪些年菜？
Since opening a restaurant, they certainly have to make a fuss on the annual dishes! Let's look at what kind of annual dishes do Fujian people take?
過年家裡桌上一定要擺上一些糖果、瓜子之類的零食招待客人....(應該是各地都一樣吧！)
There must be some snacks on the table, such as candies, melon seeds...etc, to entertain guests.(It should be all the same in anywhere of China.)
我們到的時候，正陸續上菜中.....(肚子也咕嚕咕嚕叫中~)
The dishes were serving while we arrived.(My stomach was rumbling too.~)
紅糟黃瓜魚(紅糟是福州菜重要的調味料)，一樣也是要有魚，表示「年年有餘」！
Red Rice Yeast Fish.(Red rice yeast is an important seasoning of Fuchou dishes.) There also must be a dish of fish to symbolize having enough every year!
香酥烤雞，不知道當天因為太多菜的關係還是有某種原因，這隻雞從頭到尾都沒有人吃！
Roast Chicken. Don't know if it was because of too many dishes or for some reason, nobody touched that chicken that day!
清蒸螃蟹，福建省靠海，有很多海產食品喔！
Steamed Crab. Because Fujian Province is close to the sea, there are so many sea food in Fujian!
青蔥烤鴨，很有台灣味，不輸北京烤鴨喔！
Scallion Roast Duck. It tasted like Taiwan's flavor. It can compete with Beijing Roast Duck!
扁肉燕魚丸湯，福州魚丸對肉肉一點都不陌生，可這扁肉燕其實就是福州餛飩，比一般餛飩小一點，因形狀似燕而得名。肉燕皮是用豬肉配以澱粉、鹽等，加以手工打制，薄如白紙、色澤潔白。其重要性更勝魚丸。
Meat-swallow Fish-ball Soup. Fuchou fish-ball is not strange to me at all. The meat-swallow is actually Fuchou won-ton, but smaller than general won-ton. It is named because it's shape looked like a swallow. The wrapper is handmade of pork mixed with starch, salt,etc. It is thin and white like paper. The importance is even more than the fish-ball.
龍蝦大餐，這隻龍蝦可是老闆遠從紐約帶回來的，體型之大可是吸引了還未離開的客人，大家搶著跟巨星龍蝦照相！
Super Lobster. This giant lobster was brought back from New York by the owner. It was attractive to those customers still in the restaurant by its size. Everybody wanted to be the first to take pictures with this superstar lobster!
這輩子沒見過這麼大的龍蝦！
This is the biggest lobster I have ever seen in my life!

Steamed Fish Dumpling. One of three treasures in Liencheng, Fujian, has the same popularity with taro dumpling and pearl meat ball.
香菇土雞湯，土雞肉滑嫩、香菇雞湯鮮甜，很難得可以在北美吃到土雞肉！
Mushroom and Domestic Chicken Soup. The chicken meat is tender and the mushroom and chicken broth is delicious and sweet. It is very rare to have domestic chicken in North America!
太平蛋麵線，鴨蛋在福州話裡和「壓亂」或「壓浪」同音，象徵吃了太平蛋和太平麵後，一整年都平安順利。在這很難買到鴨蛋，所以我們吃的是雞蛋。
Peaceful Eggs and Noodle. The duck's egg in Fuchou dialect is homonymic with "suppress a riot" or "pacify the wave", which symbolized to become safe and smooth in the whole year after eating the Peaceful Eggs and Noodle. It is very difficult to get the duck's egg here, so what we ate is the chicken's egg.
水煮蝦，福建莆田的特產之一，在台灣也很常見。
Poached Shrimps. One of the local product in Putian, Fujian, is very common in Taiwan too.
辣炒豬皮，這道菜可是風靡全桌！豬皮皮Q、香辣帶勁，搭配芹菜、香菇一起炒減少油膩感，不一會兒功夫就見底了！
Spicy Fried Pigskin. This dish took the whole table by storm! The pigskin is soft and spicy, mixed with celery and mushroom reduced the greasy sense. It did not take too long to see the bottom of the plate!
原本肉肉打算做一些地瓜黃金發糕當甜點與大家分享，讓大家新的一年可以大發特發，無奈肉肉革命九次都未成功，不好意思拿出來獻醜，只好在家裡自己啃！
Originally I planed to make some sweet potato gold Fa cake as the dessert to share with everybody so all can make fortune in the New Year. However, I did 9 times and all failed. I was too embarrassed to show the result, so I had to gnaw by myself at home!
